Grilled Beef Shortribs Marinated with Honey Mustard with Sweet Corn and Cucumber Salsa

These reminded me of not-so-fatty Korean BBQ ribs which was ok. I’m not the greatest fan of beef ribs done this way (I find that they taste more of fat and charcoal than of beef) although I did like the corn salsa that was a great palate cleanser. Yay to refreshing sides. JC mentioned how she enjoyed the corn salad, to which I noted that I actually prefer her version more.
